Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons gochujang paste
- 1 tablespoon tomato paste
- 2 tablespoons creamy peanut butter
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth or water
- 300 g ground chicken or thinly sliced chicken breast
- 200 g ramen noodles (or similar)
- 2 cups fresh spinach
- 1 tablespoon chili oil (optional)
- 1 tablespoon sesame seeds
- 2 scallions, thinly sliced
Instructions
- In a small bowl, whisk soy sauce, gochujang paste, tomato paste, peanut butter, brown sugar, sesame oil, garlic, and chicken broth until smooth.
- Heat a large skillet over medium-high heat. Add chicken and cook until browned and fully cooked.
- Cook noodles according to package instructions in a separate pot. Drain and set aside.
- Add spinach to the cooked chicken and let it wilt slightly.
- Stir in noodles and sauce, tossing until everything is coated and heated through.
- Drizzle with chili oil, sprinkle with sesame seeds and scallions, and serve hot.
Notes
Adjust spice level by reducing gochujang or adding more brown sugar. Use slightly undercooked noodles before tossing with sauce to avoid mushiness. For a vegetarian version, replace chicken with tofu or plant-based protein.
