Ingredients
- 400g linguine or spaghetti
- 3 large eggs
- 2 tablespoons grated Parmesan cheese
- 150g smoked salmon, sliced
- 1 tablespoon olive oil (optional)
- Fresh parsley or chives, finely chopped
- Salt and black pepper to taste
- Optional: squeeze of lemon juice or pinch of zest
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
- Slice smoked salmon into thin strips. Optionally, warm it briefly in a skillet with olive oil for added depth.
- In a bowl, whisk together eggs, grated Parmesan, salt, and black pepper to form a smooth sauce base.
- Return hot pasta to the pot. Add smoked salmon and pour in the egg mixture. Toss vigorously, adding splashes of reserved pasta water until the sauce becomes glossy and creamy.
- Garnish with fresh parsley or chives, extra Parmesan, and a squeeze of lemon juice if desired. Serve immediately with cracked black pepper.
