These Sourdough Discard Crackers are thin, crispy, and packed with tangy sourdough flavor. Made with simple pantry ingredients, they are the perfect no-waste snack that feels homemade, crunchy, and incredibly satisfying.

- 1 cup sourdough discard
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2 tablespoons flour (optional)
- 1 teaspoon dried rosemary or thyme (optional)
- 2 tablespoons grated cheese (optional)
- 1 teaspoon sesame or flax seeds (optional)
Instructions
- Preheat oven to 180°C and line a baking tray with parchment paper.
- In a bowl, mix sourdough discard, olive oil, and salt until smooth.
- Add flour if desired for a firmer texture.
- Spread the mixture very thinly onto the prepared baking tray using a spatula.
- Sprinkle herbs, cheese, or seeds on top if using.
- Bake for 15 minutes until partially set.
- Remove from oven and score into cracker shapes using a knife or pizza cutter.
- Return to oven and bake for another 10–15 minutes until golden and crispy.
- Allow crackers to cool completely before serving or storing.
Notes
For extra crispy crackers, spread the mixture as thin as possible. Store in an airtight container for up to one week. If the crackers soften, reheat them in the oven for a few minutes to restore crunch.
