Ingredients
- 2 cans (15 oz each) chickpeas (garbanzo beans), rinsed and drained
- 1 1/2 tablespoons olive oil or avocado oil
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rinse and drain the chickpeas, then spread them out on a clean kitchen towel. Pat completely dry to ensure maximum crispiness.
- In a bowl, toss the chickpeas with olive oil and all the spices until evenly coated.
- Spread the chickpeas in a single layer on the baking sheet and roast for 25–35 minutes, shaking the pan halfway through. Watch closely near the end for desired crispiness.
- Remove from oven, let cool completely, and sprinkle with extra salt or spice if desired. They will crisp up more as they cool.
- Store in an airtight container for up to 3 days, or re-crisp in the oven for 5–7 minutes before serving.
Notes
For even more crunch, remove the chickpea skins before roasting. To make air fryer chickpeas, cook at 390°F for 15 minutes, shaking halfway through. Try tossing with chipotle, chili-lime, or curry spice blends for a fun twist. Perfect as a salad topper, snack mix addition, or party appetizer.
