Description

These Spicy Roasted Chickpeas are a crunchy, flavorful, and healthy snack that’s perfect for Thanksgiving or any time you crave something savory with a kick. Light, crispy, and packed with smoky spices, they’re a guilt-free treat that’s high in fiber and plant-based protein. Serve them warm as an appetizer, toss them on salads, or pack them as an on-the-go snack everyone will love.


Ingredients

  • 2 cans (15 oz each) chickpeas (garbanzo beans), rinsed and drained
  • 1 1/2 tablespoons olive oil or avocado oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and drain the chickpeas, then spread them out on a clean kitchen towel. Pat completely dry to ensure maximum crispiness.
  3. In a bowl, toss the chickpeas with olive oil and all the spices until evenly coated.
  4. Spread the chickpeas in a single layer on the baking sheet and roast for 25–35 minutes, shaking the pan halfway through. Watch closely near the end for desired crispiness.
  5. Remove from oven, let cool completely, and sprinkle with extra salt or spice if desired. They will crisp up more as they cool.
  6. Store in an airtight container for up to 3 days, or re-crisp in the oven for 5–7 minutes before serving.

Notes

For even more crunch, remove the chickpea skins before roasting. To make air fryer chickpeas, cook at 390°F for 15 minutes, shaking halfway through. Try tossing with chipotle, chili-lime, or curry spice blends for a fun twist. Perfect as a salad topper, snack mix addition, or party appetizer.
