Description
This homemade strawberry gelatin is a wholesome, fruit-based snack made with real strawberries, raw honey, and grass-fed beef gelatin. It delivers the nostalgic jiggle of classic gelatin with clean, natural ingredients and no artificial dyes or preservatives.
Ingredients
Scale
- 2 cups fresh strawberries, hulled
- 1 tablespoon fresh lime juice
- 3 tablespoons raw honey
- 2 tablespoons grass-fed beef gelatin
- 1 cup filtered water
- Optional: whipped cream and sliced strawberries for serving
Instructions
- Wash and hull the strawberries, then blend until smooth and strain to remove seeds.
- Measure out 1/2 cup of strawberry puree and sprinkle gelatin over it to bloom for 5 minutes.
- In a saucepan, combine remaining puree, water, and honey and heat until just simmering.
- Remove from heat and whisk in bloomed gelatin until fully dissolved.
- Let mixture cool slightly, then pour into silicone molds or glass cups.
- Refrigerate for at least 4 hours until fully set.
- Serve chilled with whipped cream or fresh strawberries if desired.
Notes
Do not boil the gelatin mixture, as high heat can weaken its setting power. Adjust honey based on strawberry sweetness and chill fully for best texture.
