Description

This Summer Salad is fresh, colorful, and easy to prepare, bringing together crisp vegetables, sweet corn, fresh herbs, soft cheese, and a bright lemon dressing. It is light, refreshing, and perfect for warm days, quick dinners, picnics, or healthy side dishes.


Ingredients

  • 2 cups fresh cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1 cup fresh corn kernels
  • 1/4 red onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup feta cheese or mozzarella
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Wash all vegetables thoroughly.
  2. Slice the cherry tomatoes in half and dice the cucumber into small pieces.
  3. Cut the bell pepper into thin strips and finely slice the red onion.
  4. Chop the parsley and basil just before mixing for the freshest flavor.
  5. In a large mixing bowl, combine tomatoes, cucumber, corn, red onion, bell pepper, parsley, and basil.
  6. Sprinkle feta cheese or mozzarella over the top.
  7. In a small bowl, whisk together olive oil, fresh lemon juice, salt, and black pepper.
  8. Pour the dressing over the salad.
  9. Toss gently until everything is lightly coated.
  10. Serve immediately, or chill briefly before serving for an extra refreshing summer salad.

Notes

Use fresh, ripe, seasonal vegetables for the best flavor. Keep the dressing separate if making ahead, then toss just before serving. Add strawberries, watermelon, olives, grilled chicken, or fish for easy variations.
