Description

This Sweet Potato Beef Bowl is a viral dinner favorite made with roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and a drizzle of hot honey. Packed with protein, flavor, and satisfying textures, it is the perfect quick and nourishing meal for busy weeknights.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup cottage cheese
  • 2 tablespoons hot honey
  • 1 avocado, sliced (optional)
  • Fresh parsley or green onions for garnish

Instructions

  1. Preheat oven to 425°F.
  2. Toss sweet potato cubes with olive oil, salt, pepper, and half of the paprika.
  3. Spread on a baking tray and roast for 20–25 minutes until tender and lightly crispy.
  4. While the sweet potatoes cook, heat a skillet over medium heat.
  5. Add ground beef and cook until browned, breaking it apart as it cooks.
  6. Season with garlic powder, onion powder, remaining paprika, salt, and pepper.
  7. Cook until the beef is fully done and flavorful.
  8. Divide roasted sweet potatoes between serving bowls.
  9. Top with seasoned ground beef and cottage cheese.
  10. Drizzle with hot honey.
  11. Add avocado and fresh herbs if desired.
  12. Serve immediately and enjoy.

Notes

For extra crispy sweet potatoes, avoid overcrowding the baking tray. Adjust the amount of hot honey based on your spice preference. Store ingredients separately for easy meal prep throughout the week.
