Ingredients
- 2 cups cubed butternut squash
- 2 large carrots, peeled and chopped
- 2 parsnips or turnips, peeled and chopped
- 1 sweet potato, diced
- 1 fennel bulb, sliced thin
- 1 large onion, quartered
- 4 cloves garlic, peeled
- 3 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- 4 cups vegetable broth
- 1 cup unsweetened coconut milk or milk of choice
- 1 tbsp lemon juice
- Fresh parsley or chives, for garnish
Instructions
- Preheat oven to 400°F (200°C). Arrange the chopped vegetables, fennel, onion, and garlic on a baking tray.
- Drizzle with olive oil, sprinkle with thyme, paprika, salt, and pepper, and toss to coat evenly.
- Roast for 30–35 minutes until edges are golden and caramelized.
- In a large pot, heat a drizzle of olive oil and add the roasted vegetables.
- Pour in a splash of broth to deglaze and loosen the browned bits for extra flavor.
- Add the remaining vegetable broth and simmer for 15–20 minutes until vegetables are tender.
- Use an immersion blender to puree until smooth (or leave partially chunky for texture).
- Stir in lemon juice and adjust seasoning to taste. Add coconut milk for extra creaminess if desired.
- Ladle into bowls, garnish with parsley or chives, and serve warm with crusty bread.
Notes
You can easily customize this soup by swapping vegetables like pumpkin for squash or sweet potatoes for white potatoes. For added protein, stir in cooked lentils or chickpeas. Store leftovers in the fridge for up to 5 days or freeze for 3 months.
