- 1 lb ground beef
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 4 cups beef broth
- 3 cups marinara sauce
- 8 lasagna noodles, broken into bite-sized pieces
- 1 cup cottage cheese (or ricotta)
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- Optional: 2 cups spinach, mushrooms, or zucchini
- Fresh basil, parsley, or red pepper flakes for garnish
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
- Add ground beef and cook until browned, breaking it into small crumbles.
- Stir in Italian seasoning, marinara sauce, and beef broth. Simmer for 5 minutes.
- Break lasagna noodles into pieces and add to the pot. Cook until noodles are tender but not mushy.
- Stir in cottage cheese, mozzarella, and Parmesan until melted into the soup.
- Season with salt and pepper to taste.
- Garnish with basil, parsley, or chili flakes before serving.
Notes
For best results, slightly undercook noodles or cook them separately and add before serving to prevent mushiness. Swap beef for turkey, chicken, or plant-based crumbles if desired.
