  • 4 oz cream cheese
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • Red food coloring (gel recommended)
  • 1 cup unsalted butter (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 34 tablespoons heavy cream (for frosting)
  • Peach or ivory food coloring (for frosting)
  • Red gel icing or syrup (for vampire bite effect)
  • Toothpick for making puncture marks

Instructions

  1. Preheat oven to 350°F and line a muffin pan with cupcake liners.
  2. Sift flour, cocoa powder, baking soda, and salt together.
  3. Cream butter and sugar until pale and fluffy, then add eggs one at a time.
  4. Alternate adding dry ingredients with buttermilk, finishing with vinegar, red food coloring, and vanilla.
  5. Fill liners and bake for 18–20 minutes, until a toothpick comes out clean. Cool completely.
  6. Prepare filling: beat cream cheese and powdered sugar until smooth, fold in whipped cream, and tint with red food coloring for a ‘bloody’ look.
  7. Core out the center of each cupcake and spoon in the filling.
  8. Make frosting: whip butter until creamy, add powdered sugar gradually, then add cream and tint with peach or ivory coloring for a skin-tone effect.
  9. Frost cupcakes smoothly to resemble skin.
  10. Use a toothpick to poke two small holes, then add red gel icing to create vampire bite marks and let it drip for realism.
