Description

This refreshing watermelon salad combines sweet juicy watermelon, crisp cucumber, tangy feta, and aromatic fresh mint for the ultimate summer bite. Tossed with a zesty lime-honey dressing, it’s perfect for picnics, BBQs, and warm afternoons.


Ingredients

  • 4 cups cubed watermelon
  • 1 large English cucumber, thinly sliced
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1 cup feta cheese in brine, crumbled
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • Optional: pinch of Aleppo pepper

Instructions

  1. Cube the watermelon and slice the cucumber. Place them in a large mixing bowl.
  2. Finely chop the mint and basil, reserving a small portion for garnish.
  3. In a small bowl, whisk together lime juice, honey, olive oil, salt, and Aleppo pepper (if using) until smooth.
  4. Pour the dressing over the watermelon and cucumber. Toss gently to coat.
  5. Sprinkle crumbled feta over the salad and toss lightly again.
  6. Top with reserved herbs and serve immediately for maximum freshness.

Notes

For extra crunch, add toasted seeds or nuts. Swap feta with goat cheese for a creamier flavor. To make ahead, store dressing separately and combine just before serving.
