- 4 cups cubed watermelon
- 1 large English cucumber, thinly sliced
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1 cup feta cheese in brine, crumbled
- 3 tablespoons fresh lime juice
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon kosher salt
- Optional: pinch of Aleppo pepper
Instructions
- Cube the watermelon and slice the cucumber. Place them in a large mixing bowl.
- Finely chop the mint and basil, reserving a small portion for garnish.
- In a small bowl, whisk together lime juice, honey, olive oil, salt, and Aleppo pepper (if using) until smooth.
- Pour the dressing over the watermelon and cucumber. Toss gently to coat.
- Sprinkle crumbled feta over the salad and toss lightly again.
- Top with reserved herbs and serve immediately for maximum freshness.
Notes
For extra crunch, add toasted seeds or nuts. Swap feta with goat cheese for a creamier flavor. To make ahead, store dressing separately and combine just before serving.
